Oat cookies
Crisp and chewy peanut butter oat cookies, lightly golden and easy to make, perfect for a quick homemade treat with or without raisins.

Preparation
Step 1
Preheat the oven to 170°C and line two baking trays with baking paper.
Step 2
Place the oats in a food processor and pulse briefly until they are reduced to about half their original size. Add the bicarbonate of soda and process for another 5 seconds, then transfer the mixture to a mixing bowl.
Step 3
Add the peanut butter, sugar and egg, along with the raisins if using, and mix until everything is thoroughly combined.
Step 4
Shape the mixture into walnut-sized balls and arrange them on the prepared trays, leaving a little space between each. Press each ball down to flatten it to around 1cm (½in) thick.
Step 5
Bake for 12-14 minutes, until the cookies are crisp and just starting to turn golden. Leave them to cool on the baking trays so they can firm up before serving.
