No-Cook Blackcurrant Jam
Rich, fruity and wonderfully easy to prepare! Because the blackcurrants are not cooked, the spread retains a fresh berry flavor. Store it in the refrigerator or freeze it for longer storage.

Preparation
Step 1
Prepare the ingredients. Choose ripe, undamaged blackcurrants.
Step 2
Sort through the berries and remove any stems, leaves and damaged fruit. Rinse them thoroughly and trim off the dry tips with small scissors, if necessary. Place the berries in a deep bowl and purée them with an immersion blender. You can also process them through a meat grinder.
Step 3
Add the sugar and lemon juice to the blackcurrant purée and mix well.
Step 4
Continue stirring until the sugar has dissolved as completely as possible.
Step 5
Prepare clean, completely dry jars for refrigerator storage or freezer-safe containers if you plan to freeze the jam. Wash the lids thoroughly and dry them before use.
Step 6
Divide the no-cook blackcurrant jam among the prepared containers. Sprinkle a little sugar over the surface, if desired, then close tightly. Store in the refrigerator for up to 3 weeks or in the freezer for up to 1 year; do not store this uncooked jam at room temperature or in a cellar.
