No-Bake Kiwi and Sour Cream Cake

Advice
Choose good-quality, trusted condensed milk. It should contain only two ingredients: milk and sugar, without vegetable fats or additives. The quality of the condensed milk will determine the final taste and quality of the dish.
Preparation
Step 1
Use shortbread-type cookies. Choose high-quality, natural butter, condensed milk, and sour cream without vegetable fats.
Step 2
Crush the cookies in any convenient way. The fastest and easiest is to put them in a bag and crush them with a rolling pin. Transfer the crumbs to a bowl.
Step 3
Melt the butter - you can do this in the microwave, in a water bath, or in a saucepan. More details about each method are at the end of the recipe.
Step 4
Pour the melted butter into the bowl with the crumbs and mix. The mixture shouldn’t be too dry - it should hold together without crumbling. If it’s too dry, add a little milk.
Step 5
Take a springform pan (mine is 20 cm / about 8 inches in diameter). A smaller pan will yield a taller cake. Pour the crumb mixture into the pan and press it firmly with a glass with a flat bottom. Place the pan in the refrigerator while you prepare the filling.
Step 6
Pour gelatin into water and leave it to swell for the time indicated on the package. I use quick-dissolving gelatin, which swells very fast. After the required time, melt the gelatin in the microwave or on the stove, but do not let it boil.
Step 7
In another bowl, pour in the sour cream, condensed milk, and melted gelatin.
Step 8
Whisk everything until smooth.
Step 9
Take the pan with the crust out of the fridge and pour the filling over it. Return the cake to the refrigerator until fully set, at least 2 hours. Then remove it from the mold.
Step 10
Wash the kiwi, peel it, and slice it into thin rounds.
Step 11
Arrange the kiwi slices on top of the cake.

Serve the cake. It slices well and holds its shape beautifully. Bon appétit!
