Preparation
Step 1
Use any type of shortbread cookies. Any milk fat content will work. Choose natural, tasty honey – though the dessert can be made without it too.

Start by making the custard, since it needs time to cool. Use a saucepan with a thick bottom—this is important as the custard contains eggs and milk, which can burn. Add sugar and flour to the pan. While stirring constantly, slowly pour in the milk. Crack in the egg and mix until smooth.
Step 3
Place the saucepan over low heat. Cook the custard, stirring constantly with a whisk, until it thickens—this takes about 5 minutes. When the first bubbles appear, remove from heat. Let it cool slightly for a couple of minutes, then add butter and stir until fully melted and combined. Set aside to cool completely.
Step 4
While the custard cools, prepare the cookies. Crush them using a blender, food processor, meat grinder, or rolling pin. The texture should be fine crumbs. Transfer to a deep bowl.
Step 5
Once the custard has fully cooled, add the honey and mix well. If your honey is thick, warm it slightly in a water bath first.
Step 6
Set aside about 50 grams (about 1.75 oz) of cookie crumbs for coating. Pour the rest of the crumbs into the custard and mix. If the mixture feels too soft, add a bit more cookie crumbs. Keep in mind the mass will firm up in the fridge as the butter sets.
Step 7
Shape the mixture into small balls of any size. Roll them in the reserved cookie crumbs. You can also use coconut flakes or chocolate sprinkles for coating. Place the pastries in the fridge for a few hours until firm.
Step 8
Serve the pastries chilled. Enjoy your dessert!
