No-Bake Broken Glass Jelly Cake with Cookies
This colorful no-bake dessert combines a creamy sour cream base with bright cubes of fruit jelly and cookies. Its playful mosaic appearance makes it especially suitable for birthdays and other celebrations.

Preparation
Step 1
Prepare the ingredients. Sour cream with any fat content will work. Take it out of the refrigerator beforehand so it reaches room temperature. Choose several differently colored jelly flavors for a more colorful cake; the original recipe uses raspberry, mango and kiwi.
Step 2
First, prepare the colored jelly. Make each flavor according to the package instructions, but use half the stated amount of water so the jelly sets more firmly and is easier to cut. The original recipe dissolves each packet in 4½ fl oz of boiling water. Cool the jelly to room temperature, then refrigerate for approximately 3 hours, until completely set.
Step 3
Remove the set jelly from the molds and cut it into small cubes.
Step 4
Pour ½ cup of cold boiled water over the gelatin, stir and leave for 20 minutes to bloom.
Step 5
Heat the bloomed gelatin over a water bath, stirring constantly, until completely dissolved. Alternatively, warm it gently over low heat while stirring. Do not let it boil. Allow the dissolved gelatin to cool slightly.
Step 6
Combine the room-temperature sour cream with the sugar and beat with an electric mixer on low speed. Using sour cream that is not cold helps the gelatin blend in more evenly.
Step 7
With the mixer running continuously, gradually pour the gelatin mixture into the sweetened sour cream in a thin stream. Beat until evenly incorporated.
Step 8
Add the cubes of colored jelly and the cookies to the sour cream mixture. Mix quickly and gently, as the mixture will begin to thicken.
Step 9
Use a dome-shaped bowl or another suitable mold if desired. Line it with plastic wrap for easier removal. Spoon in the mixture, smooth the surface and refrigerate for approximately 5 hours, until completely set.
Step 10
Invert the chilled dessert onto a serving plate and remove the plastic wrap. Slice and serve.
