New Year Winter Spiced Pie

Preparation
Step 1
Prepare the ingredients. Crack the egg into slightly warm milk, about 30°C (86°F), and gently whisk it together. Add the sugar and yeast and mix until dissolved. Pour in the vegetable oil and mix with a whisk. Begin adding the sifted flour with salt in portions. Knead the dough first with a spoon, then continue by hand. The dough should be slightly sticky, not stiff. Cover it with a towel and place it in a warm spot for 1-2 hours.

Wash the apples, pat them dry with a paper towel, and cut them into small cubes. Transfer them to a saucepan or skillet and lightly fry them in butter for a couple of minutes. Then add sugar and cinnamon to taste, stir with a spatula, and continue frying until the sugar begins to caramelize. Remove the saucepan from the heat.
Step 3
Wash the orange and grate the colored part of the peel from the whole orange on a fine grater. Squeeze the juice from the flesh using a hand juicer. Rinse the lingonberries and place 250 g (8.8 oz) into a clean saucepan. Add the honey, zest, wine, and orange juice. Put the saucepan over the heat, stir, and cook the sauce for about 10 minutes. Then blend half of the sauce and return it to the saucepan. Cook the sauce for another 15 minutes. Transfer the hot sauce to the apples.
Step 4
Add the cherry jam to the berry and fruit mixture. It is best if the jam contains whole berries. Stir the contents of the saucepan. The filling for the pie is ready. Turn the oven on in advance so it has time to heat to 180°C (350°F).
Step 5
By this time the dough should have at least doubled in size. Dust it lightly with flour and punch it down so the excess carbon dioxide escapes. Keep in mind that flour properties vary, so you may need a little less or a little more during kneading.
Step 6
Cut off the larger part of the dough, leaving a little for making the lattice on top of the pie. Roll the larger part into a large circle and transfer it to a round baking pan greased with vegetable oil. Shape the bottom and sides of the future pie.
Step 7
Put the filling into the dough shell and spread it evenly throughout the pie. Sprinkle the remaining lingonberries, 50 g (1.8 oz), over the top.
Step 8
Roll out the remaining dough into a small sheet and cut it into narrow strips. Arrange these strips over the pie to create a lattice. Carefully fold in the edges of the pie. Brush the lattice and the rim of the pie with beaten egg.
Step 9
Bake the pie in an oven preheated to 180°C (350°F) for about 25–30 minutes. The exact baking time and temperature will depend on your oven. Let the finished pie cool, then serve it. Enjoy your meal!
