New Year’s Salad Balls

Colorful crab stick and cheese balls rolled in carrots, beets, or dill. A festive and delicious appetizer for any holiday table.

Advice
Prepare salads only from fully cooled ingredients. If made from warm ingredients, the salad can spoil quickly. How to boil hard-boiled eggs? To prevent eggs from cracking during cooking, place them in cold water and bring to a boil over low heat. Boil the eggs for 9 minutes after boiling starts, then pour cold water over them and let them cool. The sudden temperature change makes the shells easier to peel.
Preparation
Step 1
You can substitute crab sticks with crab meat if you prefer. You can use any cheese for the salad (processed cheese, mozzarella, etc.); I used suluguni.
Step 2
Boil the eggs, carrots, and beets in advance and peel them.
Step 3
Let the eggs cool, then grate them on a fine grater.
Step 4
If you’re using hard cheese, grate it on a fine grater. If you choose processed cheese, simply mix it into the salad with the other ingredients.
Step 5
Remove the film from the crab sticks and grate them finely. They’ll be easier to grate if slightly frozen.
Step 6
Place the grated eggs, cheese, and crab sticks into a bowl. Add mayonnaise.
Step 7
Mix all ingredients in the bowl until smooth. You can add a little salt to taste. The resulting mixture will be the base for our salad.
Step 8
Now prepare the coatings for the New Year’s salad balls. Grate the carrot.
Step 9
Grate the beet as well, preferably on a coarse grater so it doesn’t release too much juice.
Step 10
Wash and dry the dill and parsley thoroughly. Finely chop the dill - it will be used for rolling the salad balls. From the parsley, you’ll only need small sprigs to make “loops” for decorating the balls.
Step 11
Form balls from the prepared salad mixture, slightly larger than a walnut. Do this while wearing thin gloves. From this quantity of ingredients, I got exactly 10 balls.
Step 12
Roll the prepared balls in carrots, beets, and dill - either separately or combined, as you prefer. Finally, decorate each ball with half an olive and a small sprig of parsley. It should look beautiful and taste delicious. Enjoy your meal!
