New Year’s Breakfast with “Pine Cones”
Surprise the kids during the Christmas holidays with an unusual breakfast! It’s a classic European-style breakfast served in a fun format. Add fresh veggies, toasted bread, juice, or a cup of coffee. For a heartier option, add potatoes.

Preparation
Step 1
Prepare all ingredients. Use good-quality plump sausages (sardelki-style), fresh dill, salt, and butter and vegetable oil for frying. Instead of plump sausages, you can use thicker small sausages that are suitable in shape for making “pine cones.” Long thin Vienna-style sausages won’t work for this recipe.
Step 2
Take the sausages and, using a sharp knife, make deep diagonal cuts first in one direction and then in the other. You should get a pattern of small diamond-shaped squares. Do not cut all the way through, otherwise the “scales” of the cones won’t have anything to hold onto.
Step 3
Heat vegetable oil in a skillet, add the prepared sausages, and fry on medium heat on all sides until golden. As they cook, the “scales” will open and form “pine cones.” You can replace vegetable oil with butter, but then it’s better to use clarified butter, which is more suitable for frying. Or fry the sausages in a mix of vegetable oil and butter so the butter doesn’t burn.
Step 4
In a clean skillet, add a piece of butter, melt it, place a pastry ring (diameter 3 in / 7.6 cm) in the center (greased with vegetable oil), and crack a chicken egg into the ring. Fry the sunny-side-up egg over slightly-above-medium heat until the white is set. Salt the egg at the end. Do not salt ahead of time, because white spots may appear on the yolk and the white can become tougher.
Step 5
Carefully remove the pastry ring and use a spatula to transfer the fried egg to a plate. Make the second egg the same way and place it on the plate as well. Add the sausage “pine cones” next to the eggs and garnish with fresh dill. Serve the New Year’s breakfast with bread and a cup of tasty cappuccino.
