Preparation
Step 1
Prepare the necessary ingredients. What kind of meat can you use besides pork? Any meat works: beef, lamb, chicken, or turkey. Just keep in mind that this will change the calorie content and cooking time. You can adjust the vegetables and spices to your liking.
Step 2
Cut the pork and bacon into small cubes.
Step 3
Wash the potatoes under running water using a brush, peel, and cut them into wedges.
Step 4
Rinse the mushrooms and slice them. If possible, use young, fresh champignons. You can also use other mushrooms, but they may need to be pre-boiled, especially if they are fresh wild mushrooms.
Step 5
Wash the bell pepper under running water, dry it, remove the seeds and stem, and cut it into strips.
Step 6
Cut the pickled cucumbers into strips. You can replace pickled cucumbers with salted cucumbers.
Step 7
Peel the onion, then slice it into half-rings or small cubes, depending on your preference.
Step 8
In a pan, heat some vegetable oil over high heat. Add the pork and fry, stirring occasionally, for 8-10 minutes until it gets a golden crust. While the meat is frying, bring water to a boil in a pot. Transfer the fried pork to the boiling water.
Step 9
Place the bacon in the pan and fry it for 5 minutes until the excess fat is rendered. Transfer the fried bacon to the pot.
Step 10
Add bay leaves and allspice to the pot. Bring to a boil and cook on low heat for about 30 minutes with the lid on.
Step 11
In a separate pan, heat the remaining vegetable oil over medium heat. Add the onion and fry until it becomes transparent.
Step 12
Add the mushrooms, potatoes, and garlic to the pan. Fry, stirring occasionally, for 5-7 minutes.
Step 13
Add tomato paste to the pan and fry, stirring, for another 2-3 minutes. You can replace the tomato paste with canned tomatoes, fresh tomatoes, or ketchup.
Step 14
Add the fried vegetables, bell pepper, pickled cucumbers, marjoram, paprika, ground pepper, and salt to the pot.
Step 15
Cook the soup covered for another 15 minutes or longer, until the meat and vegetables are fully cooked.
Step 16
Serve the finished soup with mushrooms, meat, and potatoes in bowls, garnished with fresh herbs. Enjoy your meal!
