Easy
About 20 min.
Preparation
Step 1
Use buttery margarine with a high-fat content.
Step 2
Soften the margarine and mash it together with granulated sugar using a fork. You can also use cooking gloves to mix.
Step 3
Add eggs to the margarine mixture and mix well with a fork or by hand (with gloves).
Step 4
Quench the baking soda with vinegar - it will fizz, which is normal.
Step 5
Add sifted flour and the vinegar-quenched soda to the egg-butter mixture.
Step 6
Knead a soft, elastic dough with your hands. It will be slightly sticky - that’s okay. Do not add more flour, or the cookies will turn out dense and hard.
Step 7
Wrap the dough in plastic wrap or a bag and place it in the refrigerator for 20–30 minutes.
Step 8
Generously grease your mushroom mold (or “nut” mold) with vegetable oil. This only needs to be done before the first batch. Place the mold over a gas burner to heat.
Step 9
While the mold heats, roll small dough balls slightly smaller than a walnut. Use gloves or dampen your hands with water.
Step 10
Place the dough balls into the hot mold indentations. Close and gently press the mold. Excess dough may squeeze out - trim it off with a knife to prevent burning.
Step 11
Bake the cookies on medium gas heat, flipping the mold regularly for even browning. Cookies cook quickly, so don’t walk away from the stove!
Step 12
Once done, carefully remove and separate the hot mushroom cookie halves. Let them cool.
Step 13
Fill one half of each “mushroom” with caramelized condensed milk and press two halves together.
Step 14
Trim the edges with a sharp knife for a clean finish.
Step 15
Serve this delicious treat with a hot cup of tea. Enjoy!
