Mushroom crostini
Golden toasted bread topped with garlicky chilli mushrooms and fresh herbs, finished with olive oil for a simple, flavour-packed dish or starter.

Step 1
Heat six tablespoons of the olive oil in a frying pan over a medium heat. Add one chopped garlic and chilli and cook for about 1 minute, until fragrant. Tip in the chopped mushrooms and continue frying for a further 2-3 minutes, stirring, until they are cooked through.
Step 2
Stir in the parsley and marjoram, then season to taste with salt and freshly ground black pepper.
Step 3
While the mushrooms are cooking, toast the bread slices on both sides until golden. Lightly rub each slice with the whole garlic clove, then brush with the remaining olive oil. Cut into individual portions if desired, spoon the mushrooms over the top, and serve immediately.
