Muffins with apples and raisins

These spiced apple and banana muffins are soft, fragrant, and just sweet enough, with a crunchy oat topping. Perfect for a wholesome snack or breakfast on the go.

Preparation
Step 1
Preheat the oven to 200C and line a 12-hole muffin tin with large paper cases.
Step 2
Begin by heating the honey in a small non-stick saucepan over medium heat for 2-3 minutes, until it deepens in colour to a dark golden-brown and just starts to smoke. Add the chopped apples and spices to the pan and cook for another 3-4 minutes until the apples begin to soften. Remove from the heat and allow the mixture to cool.
Step 3
In a mixing bowl, whisk together the eggs, sesame oil, and milk, then stir in the mashed bananas.
Step 4
In a separate large bowl, combine the flour, sweetener, bicarbonate of soda, and raisins. Create a well in the centre and pour in the wet mixture. Add the cooled apples along with any syrupy liquid from the pan. Stir everything together until just combined, then divide the batter evenly between the muffin cases.
Step 5
For the topping, mix the rolled oats and sugar, then sprinkle a little over each muffin.
Step 6
Bake for 20 minutes, or until a skewer inserted into the centre of a muffin comes out clean. Cool on a wire rack. These muffins are delicious warm, or you can store them in an airtight container for up to three days and reheat for 5 minutes at 200C before serving.
