Preparation
Step 1
Start by preparing all the necessary ingredients. Use whipping cream with at least 33% fat. You can replace or add to the cherries with other fruits or berries to your taste. Use fresh or frozen cherries; no need to thaw frozen ones.
Step 2
Pour clean drinking water over the gelatin and let it swell for 15-20 minutes. Then dissolve it over low heat until all granules dissolve completely. Do not boil.
Step 3
Pour milk into a saucepan and add broken chocolate pieces. Heat gently, stirring until the chocolate is fully melted. Then remove from heat and cool to room temperature. You can also melt it in a microwave-safe bowl.
Step 4
Pour cold heavy cream into a mixing bowl and beat for about 2 minutes until light foam forms. Gradually add sugar and vanilla. While continuing to beat, slowly pour in the dissolved gelatin. Whip for another 2 minutes until fluffy. It’s very important to use high-quality cream that whips well.
Step 5
Split the mousse into two unequal parts. Add the melted chocolate to the smaller portion and beat until smooth.
Step 6
In glasses or dessert bowls, layer vanilla mousse, chocolate mousse, and cherries. Repeat the layers once or twice more depending on the size of the serving glasses. Chill in the fridge for 15-20 minutes, then serve. Enjoy!
