Moroccan grilled chicken
Marinated chicken grilled over moderate heat until juicy and fully cooked, with deep flavour developed through slow marinating and careful grilling.

Preparation
Step 1
Neatly trim the chicken pieces and place them in a large bowl with the marinade ingredients.
Step 2
Mix well to coat the chicken evenly, then cover loosely and leave to marinate in a cool place for a few hours, or preferably overnight.
Step 3
Preheat the grill or barbecue until moderately hot. Shake off any excess marinade from the chicken pieces, then grill them, turning as needed, until the juices run clear. Check for doneness by inserting a skewer into the thickest part of the meat.
Step 4
Serve chicken with greens and your favorite sauce.
