Mojito Tea

Refreshing and aromatic, with bright lemon and mint flavors! Mojito Tea is a quick drink to quench your thirst. You can make it with green or black tea. Serve hot or chilled with or without ice. Adults may optionally add a splash of rum.

Preparation
Step 1
Adjust the amount of sugar, lemons, and mint to your taste. Larger lemons give a stronger flavor; if lemons are small, use 2. Sugar can be replaced with honey or another heat-stable sweetener.
Step 2
Since lemon is used with the peel, wash it thoroughly, scrub, and wash again. Cut the lemon in half and then into slices. For stronger lemon flavor, juice half of the lemon and slice the other half.
Step 3
Wash the mint. Remove leaves from stems and gently crush them to release the flavor.
Step 4
Pour clean water into a saucepan and bring to a boil. To avoid bitterness, note that the white pith between peel and flesh gives bitterness. Choose thin-skinned lemons or use only peel and juice if needed. I used whole slices.
Step 5
Place lemon slices and mint into a teapot. Add sugar. If using a thin glass teapot, rinse it with hot (not boiling) water first.
Step 6
Pour boiling water into the teapot, aiming for the center to avoid cracking the glass. Steep 5-7 minutes with the lid on. Add more sugar if needed.
Step 7
Pour the tea into cups and serve hot. Enjoy!
