Mock Macarons
A bright, sweet, and very beautiful dessert. Prepare plenty of tea or strong coffee in advance, because this dessert is meant for true lovers of sweets. Children will especially enjoy it, not only because it is very sweet, but also because it is very colorful.

Preparation
Step 1
First, prepare the piping bags. Cut off the corners, and if the bag is too large, make it smaller. This is done so air can escape and, when the egg white mixture is added, it can settle deeper into the bag and the bag can be tied easily. It is better not to use piping tips, because the egg white mixture dries quickly, and the dried mixture will be difficult to remove from the tip.
Step 2
Now let’s make the mock macarons. Add the egg whites to a bowl, then add the citric acid to the same bowl. Mix the egg whites with the acid using a mixer for just a few seconds, only until the acid dissolves and the egg white becomes more uniform.
Step 3
Then add the powdered sugar to the same bowl in several additions, first sifting it through a sieve, in 3-4 batches. Continue mixing all the ingredients with the mixer. It is best to use good-quality powdered sugar, very finely ground rather than coarse.
Step 4
Next, add 1–2 drops of vanilla flavoring to the mixture and gently stir it in. After mixing, air bubbles will form in the egg white and sugar mixture. Because of this, tap the bowl with the mixture several times, either against the table, though that is rather loud, or, for example, lightly against your knee. Stir the icing gently once again.
Step 5
Immediately color the mixture in any shades you like, first dividing it among several bowls and adding a different color to each bowl. Add the food coloring using a skewer: first dip the skewer lightly into the coloring, and then dip that skewer into the egg white and sugar mixture. If you need a more intense color, add a few more drops of coloring and mix again.
Step 6
Now transfer the finished colored mixture into the piping bags and seal them tightly with tape. I used 4 colors.
Step 7
Cut larger openings in the corners of the bags so the mixture is easier to pipe out. Line a baking tray with baking paper and pipe the colored mixture onto it so that small circles are formed. Place the tray into an oven preheated to 180°C (350°F) and bake only until a top crust forms, then remove the tray from the oven immediately. Let the colored circles cool.
Step 8
Now take one circle and place berry jam, raspberry or mixed berry, in the center. Cover it with a second circle on top. Assemble all the mock macarons this way.
