Preparation
Step 1
For this salad it is best to use different colour, shape and size tomatoes. This will create visually interesting salad.

In a mixing bowl, combine the tomatoes with a generous seasoning of salt and pepper. Add the finely grated garlic, vinegar, and extra virgin olive oil, stirring gently to coat.
Step 3
Let the mixture rest for 10 minutes at room temperature to allow the flavors to meld.
Step 4
Tear fresh basil leaves over the tomatoes, stir through, then transfer everything - including the flavorful juices - to a serving dish. Serve immediately.
