Miso salmon
Marinated fish baked until tender, then grilled to a golden finish, served with rice. It is a bright, flavourful and easy oven-cooked dish.

For the marinade

Table of volume measurements:
- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
To prepare the marinade, combine all of the marinade ingredients in a non-metallic bowl and mix well. Add the fish, ensuring it is well coated, then cover and leave to marinate for at least 2 hours, or ideally overnight.
Step 2
When ready to cook, preheat the oven to 200°C and lightly oil a non-stick baking tray.
Step 3
Arrange the fish on the tray with the skin facing down and spoon over 2 tablespoons of the marinade. Bake for 10-12 minutes, until the fish is just cooked through.
Step 4
Heat the grill to hot. Spoon the remaining marinade over the fish, then place the tray under the grill and cook until the top is golden brown. A chef’s blowtorch can be used instead, if preferred.
Step 5
Serve immediately with fluffy rice and some lime or lemon.
