Mini Chicken and Potato Pies from Puff Yeast Dough

Preparation
Step 1
First, prepare all the necessary ingredients and spices to make the perfect homemade puff pastry with a hearty filling.
Step 2
For the dough, take a large bowl and a fine sieve. Sift 450 g (3 ⅔ cups) all-purpose flour into the bowl. Add ½ tsp salt, 1 tbsp sugar, 1 tsp instant dry yeast, ⅓ tsp turmeric. Mix all dry ingredients well.
Step 3
Crack 1 egg into another large bowl and beat it until smooth.
Step 4
Add 200 ml (¾ cup + 1 tbsp) room temperature milk to the egg and stir.
Step 5
Gradually add the flour mixture to the liquid ingredients while mixing to form dough.
Step 6
Knead the dough in the bowl by hand, add 1-2 tbsp vegetable oil and knead again until the dough is smooth and elastic.
Step 7
Place the dough on the table, shape it, then divide it into four equal parts. Roll each part into a tight ball and place them back in the bowl.
Step 8
One at a time, flatten each ball on a lightly floured surface, then roll into thin discs (2–3 mm thick). Dust with a bit of flour. Fold each in half and set aside.
Step 9
To make easy layered dough, spread softened butter evenly over one disc.
Step 10
Stack all the discs on top of each other, spreading butter between layers. Then roll them tightly into a log, carefully to avoid squeezing out the butter.

Shape the log and seal its ends. Cut it into 9 equal pieces, press each slightly by hand, place on a dish, and refrigerate.
Step 12
Heat a pan on the stove, add 2 finely chopped onions and 2-3 tbsp butter. Sauté over medium heat until the onions become translucent.
Step 13
Dice 200 g (about 1½ cups) peeled potatoes. Add to the pan with onions, season with salt, cumin, pepper mix, and coriander. Mix and let it sit on the turned-off stove.
Step 14
Dice 300 g (2 cups) chicken breast and place in a large bowl.
Step 15
Finely chop fresh parsley and add to the chicken. Then add the potato-onion mix. Mix everything and let the filling rest for 15 minutes.
Step 16
Take the dough pieces from the fridge. Press a deep indentation into each, shape a thick edge, and place 1 heaping tbsp of filling into each.
Step 17
Seal the edges well and shape the pies by hand. Place them on a baking tray lined with parchment paper. Let rise in a warm place.
Step 18
Brush the risen pies with beaten egg and sprinkle black sesame seeds on top. Bake in a preheated oven at 190°C (375°F) for 30-35 minutes until golden.
Step 19
Remove the tray from the oven, transfer the pies to a plate, and serve hot.
