Preparation
Step 1
Prepare the ingredients. Use milk of any fat content and any short pasta, such as small shells, spirals, elbow pasta or short noodles. Adjust the amount of sugar and salt to taste.
Step 2
Bring 1 liter of water with a pinch of salt to a boil in a saucepan. Add the pasta and cook over medium heat for 2–3 minutes, stirring frequently so it does not stick together or to the bottom of the pan. If using very thin vermicelli with a short cooking time, skip this step and add it directly to the hot milk.
Step 3
Drain the pasta in a colander. It should still be firm and only partially cooked.
Step 4
Bring the milk to a boil over medium heat. Add the partially cooked pasta, then season with salt and sugar to taste. When the milk returns to a boil, reduce the heat and simmer gently for about 4–5 minutes, stirring frequently, until the pasta is cooked. The total cooking time should not exceed the time stated on the pasta package.
Step 5
Remove from the heat. Add a piece of butter to the hot soup and stir or wait until it melts.
Step 6
Pour the milk soup into bowls and serve immediately.
