Milk Semolina Pie with Apricots

Preparation
Step 1
First, prepare all the necessary ingredients for this budget-friendly homemade pastry with seasonal fruits.
Step 2
For the dough, take a large bowl, add 180 g (about 1 cup) semolina, then pour in 250 ml (1 cup) milk at room temperature. Mix well and let the bowl sit for 15-20 minutes.
Step 3
In another deep bowl, crack 2 eggs, add a pinch of salt, and beat with a mixer until smooth. Add 180 g (about 3/4 cup + 2 tbsp) sugar and continue beating until you get a fluffy, pale mixture.
Step 4
Add 50 g (about 3 ½ tbsp) softened butter into the soaked semolina and mix thoroughly.
Step 5
Sift 160 g (about 1 1/4 cups) wheat flour, 10 g (2 tsp) baking powder, and 1 tsp vanilla sugar into the mixture. Stir everything together.

Continue mixing the dough with a spatula until smooth and uniform in consistency.

Gradually fold the egg mixture into the dough in three parts, gently mixing with a spatula to keep the batter airy.

Take a suitable baking pan (silicone in this case), grease it with 20 g (about 1 ½ tbsp) softened butter, and sprinkle with 20 g (2 tbsp) semolina.

Pour the prepared dough into the pan, spread evenly, and bake in a preheated oven at 180 °C (356 °F) for about 50 minutes until a golden crust forms.

After baking, remove the pan from the oven, pour 250 ml (1 cup) milk over the pie, and return the pan to the turned-off oven for 10 minutes.

After 10 minutes, remove the pie from the oven, release it from the pan, decorate with sliced apricots, and drizzle with apricot jam to taste.
