Step 1
How to make pancakes with baking powder? Prepare the ingredients. The milk should be at room temperature, so take it out of the fridge in advance and measure what you need. Use a large egg; if the eggs are small, use about 1½-2 eggs.
Step 2
In a bowl, combine the egg, sugar, vanilla sugar, and salt. Adjust sugar to taste. With 30 g sugar (about 2½ tbsp) the pancakes are lightly sweet; if you want them sweeter, add 1 tbsp more sugar. You can skip vanilla sugar or replace it with vanillin, but use only a tiny pinch, otherwise the batter may taste bitter.
Step 3
Beat with a mixer until fluffy foam forms and the sugar and salt dissolve completely. That’s why the milk shouldn’t be cold - sugar and salt dissolve slowly in cold milk. But don’t overbeat the eggs, or you’ll lose the air bubbles that make the batter fluffy.

Pour in the room-temperature milk and mix again.
Step 5
Add the vegetable oil and beat once more.
Step 6
In a separate bowl, sift the flour with the baking powder, then whisk so the baking powder is evenly distributed.
Step 7
Add the flour mixture in parts, whisking each time and breaking up any lumps. Sifting helps aerate the flour, making the batter lighter.
Step 8
In properly mixed batter, small bubbles will appear on the surface.
Step 9
Heat a skillet over medium heat; there’s no need to grease it. Spoon batter into the center and quickly form an even circle 6-8 cm (2½-3 in) in diameter. Cook for 1-2 minutes until golden. When the top sets slightly, flip and cook the other side for 1-2 minutes.
