Microwave Cake

Simple yet incredibly delicious – a dessert in just minutes! This cocoa-free cake is made in the microwave and is so easy that even a child can handle it. The sponge is soft and very tender. You can use any cream, from simple sour cream to trendy cream cheese.

Preparation
Step 1
Prepare the ingredients. You can substitute kefir with milk, but in that case, you need to neutralize the baking soda with lemon juice or vinegar. Use neutral-flavored oil. I will be making a simple sour cream and sugar cream.
Step 2
Take a bowl and pour in the kefir. Add baking soda and stir. A reaction will occur between the acid in the kefir and the baking soda, releasing carbon dioxide, which will make the sponge rise during baking. Crack in the egg and whisk.
Step 3
Add sugar and vegetable oil. Whisk again.
Step 4
Sift in the flour and mix until smooth and lump-free. The batter should be as thick as drinkable yogurt.
Step 5
Take a small microwave-safe bowl and grease it with a drop of vegetable oil. Pour in the batter. Make sure to choose a bowl that allows the sponge to rise while cooking.
Step 6
Cook the sponge cake in the microwave at maximum power for 4-5 minutes. The exact time may vary depending on the power of your microwave and the size of the dish. Do not overcook it – the sponge may burn. Check doneness with a wooden skewer – it should come out dry from the center. The sponge should spring back when pressed.

Let the sponge cool and remove it from the bowl.
Step 8
Cut the sponge into 2 or 3 layers.
Step 9
For the cream, mix sour cream with sugar. Let it sit for a while to allow the sugar to dissolve.
Step 10
Spread the cream between the layers. Cover the top and sides of the cake with cream as well. Refrigerate for one hour to allow the flavors to blend.
