Meringue Roll with Cream Cheese and Whipped Cream

Step 1
How to make a meringue roll? Prepare everything you need. Separate egg whites from yolks - you’ll need about 6 eggs. For the berry filling, you can use any thick jam or fresh berries. I use blackcurrant jam because it adds a pleasant tang to the sweet filling. Preheat the oven to 180°C / 356°F.
Step 2
Beat the egg whites for 1 minute on low speed until lightly foamy. Then, without stopping, gradually add the powdered sugar.
Step 3
Continue beating on high speed for 4-5 minutes, until the whites are so thick they hold their shape well on the whisk.
Step 4
Add lemon juice and starch to the whipped whites. Beat again briefly, for 10-15 seconds. The meringue will stay fluffy, and the starch and lemon juice will be evenly incorporated.
Step 5
Line a baking tray (40×40 cm / about 16×16 in) with baking paper and spread all the meringue onto it.

Smooth it evenly - this will be the top of the roll. Bake in the preheated oven at 180°C / 356°F for about 20-25 minutes. Keep in mind the actual temperature may run higher than indicated. If you’re unsure, reduce it to 160-170°C (320-338°F) to avoid issues. Go by your oven and the meringue’s doneness.

The meringue should turn lightly golden. Remove the tray from the oven and cover the meringue with another sheet of parchment.

Flip everything over together.

Remove the parchment sheet the meringue was baked on.

While the meringue cools, make the cream. Combine 33% fat heavy cream, cream cheese, and powdered sugar. You only need a little sugar because the meringue is very sweet. Whip until you get a thick, stable cream.

Set aside a couple of tablespoons of cream for decorating. Spread the remaining cream evenly over the surface of the flipped meringue. Add the berry filling.

Using the parchment sheet underneath, roll everything up into a log.

Decorate the top of the roll with the reserved cream.

You can garnish with any berries or fruits. Refrigerate the finished roll so the cream sets slightly.
