Menemen – Turkish Omelette

A simple and quick egg breakfast for the whole family! Menemen is a great way to diversify your morning routine. Juicy tomatoes, sweet peppers, and fresh herbs make this omelet festive despite its simplicity. Cooking takes only 20 minutes!

Preparation
Step 1
First, prepare the ingredients to taste. If you don’t have a large tomato, replace it with 2 smaller ones. Use any vegetable oil (I used sunflower). You can also mix 1 tsp vegetable oil with 1 tsp butter.
Step 2
Wash and dry the bell pepper. Remove seeds and stem. Cut the flesh into strips. I used a green bell pepper for color, but any will do. In Turkey, a special long, dark green pepper (similar to Ramiro) is often used - milder than chili but not sweet. Since it’s unavailable here, I substituted with bell pepper.
Step 3
Scald the tomato with boiling water and peel it. To peel easily: wash, cut an “X” on top, place in boiling water for 1-2 minutes, cool slightly, and remove skin. Halve, remove seeds, and cut into small cubes.
Step 4
Wash, dry, and finely chop parsley. You may replace or mix with dill, cilantro, or other herbs.
Step 5
Heat oil in a skillet over high heat. Add the green pepper and fry, stirring, for about 2 minutes.
Step 6
Add the diced tomatoes. Cook, stirring, for another 2 minutes. Season with salt and pepper.
Step 7
Crack eggs directly into the skillet and quickly fold them from the edges toward the center with a spatula.
Step 8
Cook for 1-2 minutes until the eggs set and excess liquid evaporates.
Step 9
Add chopped herbs and stir gently.
Step 10
Transfer hot omelet to a plate, garnish with fresh herbs, and serve. Ingredients listed are for 1 serving; cook each portion separately. Enjoy!
