Meatloaf with bacon

Preparation
Step 1
Preheat the oven to 200C.
Step 2
Start by gently softening the chopped onion, celery, and carrot in a hot pan with oil. Once the vegetables are tender and the onions begin to caramelise, stir in the garlic and cook briefly before setting aside to cool.
Step 3
In a large mixing bowl, combine the minced meats, bacon, herbs, spices, breadcrumbs, cream, and egg. Season generously, then add the cooled vegetables and mix thoroughly until everything is well incorporated.
Step 4
Shape the mixture into a loaf on a large baking tray, approximately the size of a standard loaf tin (30x12cm). Layer bacon strips over the loaf, tucking the edges underneath so the top and sides are fully covered.
Step 5
Prepare the glaze by gently heating all ingredients in a small saucepan until smooth and blended. Brush most of it over the meatloaf before baking.
Step 6
Bake for 30 minutes, then brush with the remaining glaze and return to the oven for another 25-30 minutes. The finished meatloaf should be piping hot in the centre, with crisp bacon and a glossy glaze.
