Meatless Shawarma

Made from simple ingredients, perfect for a family dinner or snack! This meatless shawarma is cooked with fried mushrooms but remains tasty and filling. The filling also includes plenty of vegetables, a sour cream-based sauce, and fried potatoes. Making it at home is easy, and it turns out even better than store-bought.

Preparation
Step 1
The listed ingredients make two large shawarmas, so you’ll need two large thin lavash wraps. You can skip the potatoes and only use mushrooms, but they go well together, so I included them. Wash and dry all the vegetables and greens.
Step 2
Peel the potatoes and cut them into thin matchstick-sized strips.
Step 3
Slice the onion into quarter rings.
Step 4
Gently rinse the mushrooms and place them on a paper towel. Slice them into thin pieces.
Step 5
Heat vegetable oil in a pan for frying and add the potatoes. Fry over medium heat. Don’t flip too often to let them brown. At the same time, heat oil in another pan and add the onion. Sauté until translucent, then add mushrooms. Season the potatoes and mushrooms with salt and pepper. Fry everything until done: about 15 minutes for the potatoes, 5 minutes for the mushrooms.
Step 6
Prepare the sauce. Finely chop the dill.
Step 7
Add the dill to sour cream, press in a peeled garlic clove, and add salt. Stir until smooth.
Step 8
Slice the tomato into thin slices.

Slice the cucumber into wedges.

Tear the lettuce leaves by hand. I used iceberg, but you can use regular leaf lettuce, Chinese cabbage, or white cabbage.
Step 11
Assemble the shawarma. Lay out the lavash with the short side facing you. Spread a strip of sauce. Add sliced tomato and cucumber. Layer the mushrooms on top. Crumble Adyghe cheese over them. You can substitute with any soft or hard cheese.
Step 12
Add pieces of lettuce on top, then the fried potatoes.
Step 13
Carefully roll the lavash into a tight wrap, folding in the edges.
Step 14
Grill the shawarma on a preheated grill pan on both sides until golden with nice stripes. Repeat for the second wrap.

Serve the shawarma. Enjoy your meal!
