How do you make meatless fresh cabbage soup? Prepare all the necessary ingredients. When choosing fresh cabbage, pay attention to its quality. The cabbage head should be firm, and it should have fewer dark green outer leaves, as they may give the finished soup a bitter taste.

Place a pot of water over medium heat and bring it to a boil. Peel and wash the potatoes. Put 1 small potato into the pot whole, and cut the rest into medium strips and add them to the pot as well. Add salt to taste and cook for 10–15 minutes, until half done.
Step 3
Remove any dirty or damaged leaves from the cabbage. Since the cabbage is fresh, there is no need to cut the whole head into sections. It is enough to separate the amount of leaves you need by weight. The cabbage will keep better and stay fresher if left whole. Shred the required amount of cabbage into thin strips, add it to the pot with the potatoes, and cook for 7–10 minutes.

Peel and rinse the onion, then cut it into small cubes. Pour vegetable oil into a skillet and place it over medium heat. Add the chopped onion.

Peel and wash the carrot, grate it on a fine grater, and add it to the skillet with the onion. Sauté the vegetables over medium heat for 5–7 minutes until done. The exact time depends on your stove.
Step 6
Remove the whole cooked potato from the pot and mash it with a fork. Then return the potato to the pot. This will make the soup richer and more substantial.

Add the sautéed vegetables to the pot with the soup.

Add the bay leaf, and if needed, add a little more salt. Cook for about 5 more minutes.

Wash and dry the green onion and herbs, chop them finely, and add them to the soup. Stir the soup, bring it to a boil, and remove it from the heat. Let it stand for 5–10 minutes so the flavors can develop.
