Meatballs with Rice in Tomato Sauce in a Skillet

Preparation
Step 1
Either grind the meat yourself or buy pre-ground meat. Choose white cabbage. Use medium-sized eggs or one large egg. Pre-cook the rice until half-cooked. If making meatballs for children, use minimal salt and skip black pepper entirely if you prefer.
Step 2
First, make the tomato sauce. Peel the onion and finely chop it with a knife or grate it.
Step 3
Pour vegetable oil into a deep skillet and heat it up. Add the chopped onion and sauté over low heat until translucent.
Step 4
Wash and peel the carrot, then grate it finely.
Step 5
Wash fresh tomatoes, peel off the skins, and finely chop them with a knife or puree them in a blender.
Step 6
Add the grated carrot and chopped tomatoes to the onions in the skillet. Simmer for 5–7 minutes.
Step 7
Clean the bell pepper from seeds, rinse, and finely chop it.
Step 8
Add the chopped bell pepper to the skillet and continue to simmer over low heat.

Dilute the tomato sauce with about 100 ml (approx. ⅖ cup) of hot water, leaving room in the skillet for the meatballs. Add salt and black pepper to taste.

For the meat mixture, peel and mince the garlic, and grate the cabbage. Adding cabbage makes the meatballs juicier and softer.
Step 11
Add the pre-cooked rice, grated cabbage, and garlic to the minced meat. Crack in the eggs and season with salt and pepper.

Mix the meat thoroughly with a spoon or your hands until smooth and homogeneous.
Step 13
With wet hands, form round meatballs about the size of a walnut or slightly larger. Place them gently into the prepared tomato sauce.
Step 14
Cover the skillet with a lid and simmer on low heat for 15-20 minutes.
Step 15
Sprinkle the finished meatballs with freshly chopped herbs. Simmer for another 5 minutes and serve hot. Enjoy your meal!
