Advice
For this recipe, you can use cream of any fat content. Keep in mind that the higher the fat percentage, the higher the calorie content of the dish.
Preparation
Step 1
You can use ground meat from any type of meat; I used a beef-pork mix. You can buy ready-made ground meat or make your own. It’s better to use round-grain rice - it helps the meatballs hold together.
Step 2
First, prepare the rice. Rinse it in several changes of water, then cover with clean cold water and put it on the stove. As soon as the water boils, remove the saucepan from the heat and drain the rice in a sieve. Do not rinse it again. Let the rice cool.
Step 3
Meanwhile, prepare the ground meat. Peel the onion and chop it any way you like - with a knife, in a blender, or on a grater. I always grate the onion to make the mixture juicier.
Step 4
Add the half-cooked rice to the ground meat. Crack in the egg. Season with salt and pepper to taste. You can also add your favorite spices.
Step 5
Mix the ground meat mixture thoroughly with your hands. It should become sticky and homogeneous.
Step 6
Shape the meat into balls about the size of a walnut or slightly larger. From half the recipe, I made 11 meatballs.
Step 7
Prepare the ingredients for the sauce. Use cream with 10-20% fat. Instead of meat broth, you can use vegetable broth or plain water, like I did.
Step 8
For the sauce, melt butter in a skillet over low heat. Add the flour and quickly stir it into the butter.
Step 9
Pour the broth or water into the butter-flour mixture. Stir and bring to a boil.
Step 10
Pour in the cream and stir. Season with salt and pepper to taste. If you’re using broth, account for its saltiness. Warm the sauce through, but don’t let it boil. Remove the skillet with the sauce from the heat and set aside.
Step 11
In another skillet, heat vegetable oil for frying. Roll the meatballs in flour and place them in the skillet.
Step 12
Fry the meatballs over high heat until golden brown on all sides.
Step 13
Then pour the cream sauce over the meatballs. The sauce is quite liquid, but it will thicken as it simmers. Cover the skillet with a lid and reduce the heat to the lowest setting. Simmer the meatballs for 20-30 minutes, depending on their size.
Step 14
Serve the meatballs hot with any side dish. Enjoy your meal!
