Meat with Potatoes and Cabbage in a Kazan

If you don't have a kazan in your kitchen, you can substitute it with a frying pan with high, thick edges. Enjoy your meal! In addition to pork, you can use any other type of meat. Keep in mind that the cooking time, flavor, and calorie content will change. For example, beef takes longer to cook than pork, and chicken breast or turkey cooks faster. Rinse the meat, dry it with a paper towel, otherwise, excess moisture will prevent it from frying, and it will end up stewing.
Preparation
Step 1
Prepare all the ingredients you'll need. You can use any meat: beef, pork, chicken, etc. Just keep in mind that the cooking time and calorie content will change. I’m using pork this time.
Step 2
Rinse the piece of meat under cold running water, and pat it dry with a paper towel to remove the moisture. Cut it into small, even-sized pieces across the grain; this will make the meat softer once cooked.
Step 3
Wash the onion, carrot, and pepper, and dry them with a towel. Peel the carrot and onion. Cut the bell pepper in half and remove the seeds and stem. For a colorful dish, use peppers of different colors, if possible.
Step 4
Cut the bell pepper and onion into cubes, and the carrot into sticks. Mince the garlic finely with a knife. The way you chop these vegetables may differ depending on your taste preferences.
Step 5
Heat a small amount of oil in the kazan and carefully add the pork. Reduce the heat to low and cover with a lid. Let the meat stew for about an hour. The exact time depends on the characteristics of your stove and kazan. If the meat starts to burn, add some water. At the end of the stewing, open the lid. If there’s still liquid in the kazan, increase the flame to medium and let the water evaporate.
Step 6
Add the onion, carrot, bell pepper, and garlic to the kazan.
Step 7
Stir everything and fry for a few minutes over medium heat until the vegetables soften.
Step 8
Peel the potatoes, wash them, and cut them into medium-sized pieces that are easy to eat. Remove the outer damaged leaves from the cabbage and shred it into thin strips.
Step 9
Add the potatoes to the kazan with the meat and vegetables. Stir and simmer under a lid for about 5 minutes on moderate heat. If necessary, add 50-100 ml of water to prevent burning.
Step 10
Add the fresh cabbage to the kazan and stew everything together for another 5 minutes on moderate heat.
Step 11
Wash the tomatoes, dry them, and cut them into small cubes. If desired, remove the skin from the tomatoes. Add the tomatoes and sauerkraut to the kazan with the other ingredients. Salt and pepper to taste. You can also add your favorite spices at this stage. Mix everything, cover with a lid, and stew for about 20 minutes over medium heat until all components are cooked.
Step 12
Wash the herbs, dry them with a paper towel, and chop them finely. Serve the dish on plates, sprinkle with herbs, and enjoy your meal!
