Meat with Cabbage and Potatoes in a Pan

Besides pork, you can use any other type of meat in this dish. Keep in mind that cooking time, taste, and calorie content will vary. For example, beef takes longer to cook than pork, while chicken breast or turkey cooks faster.
Preparation
Step 1
You can use pork tenderloin, neck, ham, or loin. I used pork tenderloin.
Step 2
Rinse the meat well, pat it dry, and cut into medium-sized pieces.
Step 3
Heat vegetable oil in a suitable-sized pan. Add the pork pieces and fry over medium-high heat until golden brown. Turn the pieces occasionally to ensure even browning. The crust will seal in the meat’s juices, making it tender. Lightly salt the meat.
Step 4
Peel and wash the onion, then dice it into small cubes.
Step 5
Peel, wash, and dice the carrot into small cubes.
Step 6
In a separate pan, heat vegetable oil and sauté the onion and carrot, stirring, for about 5 minutes.
Step 7
Transfer the sautéed vegetables to the pan with the meat. Add 3-4 tbsp (45-60 ml) of water, mix, cover with a lid, and simmer for 15-20 minutes.
Step 8
Wash the cabbage. Remove any wilted or damaged outer leaves. Cut the cabbage into petal-like pieces by first dividing it into crescent-shaped wedges, then slicing across into smaller segments. You can also cut it into thick strips if preferred.

In the pan where the vegetables were fried, heat more vegetable oil and sauté the cabbage until it is half-cooked.
Step 10
Add tomato paste to the cabbage, stir, and cook for another 2-3 minutes, allowing the tomato paste to coat the cabbage evenly.

Transfer the cabbage to the pan with the meat and vegetables.
Step 12
Season with salt, aromatic herbs, and spices as desired. Mix well and continue simmering, covered, over medium heat.

Peel and cut the potatoes into small cubes.
Step 14
In a separate pan, fry the potatoes in vegetable oil until golden and tender. Lightly salt.

Add the fried potatoes to the pan with the meat and vegetables. Add a bay leaf, mix well, and simmer for another 10 minutes, stirring occasionally. Cooking time may vary depending on your stove—adjust as needed. Let the dish rest, covered, for 10-15 minutes before serving.
