Meat Patties with Eggplant and Zucchini

A quick dish from affordable and seasonal ingredients! A very simple Turkish-style recipe for juicy patties with eggplant, zucchini, and mixed minced meat that will surprise with their flavor and surely please many!

Preparation
Step 1
First, prepare all the necessary ingredients and spices for this hearty dish made with seasonal vegetables and minced meat.
Step 2
Using a large grater and a deep bowl, grate 200 g (about 7 oz) of young zucchini and 150 g (about 5.3 oz) of young eggplant. If the vegetables are more mature, peel them first.
Step 3
Finely chop 50 g (about 1.8 oz) of green onions (or substitute with regular onion if you prefer) and add them to the grated vegetables.
Step 4
Add 400 g (about 14 oz) of mixed ground meat into the bowl, then season with salt, khmeli-suneli, dried garlic, and a mix of ground peppers to taste.
Step 5
Mix everything thoroughly until you get a uniform mixture. Cover the bowl and place it in the refrigerator for 30 minutes.
Step 6
After the resting time, mix the minced meat again. Take a portion in your hands, toss it a few times to compact it, and then form firm patties.
Step 7
Coat the patties in all-purpose wheat flour and shape them neatly.
Step 8
Heat a suitable skillet over medium heat, pour in vegetable oil, and once hot, add the floured patties. Fry until golden brown on one side.
Step 9
Flip the patties, cover the skillet with a lid, and cook on low heat for 7-10 minutes until fully done.
Step 10
Arrange the juicy patties on serving plates and serve with your favorite side dish. Cooking together, simply and deliciously at home - enjoy your meal!
