Meat Patties in Tomato Sauce in a Skillet

Preparation
Step 1
Take mixed ground meat, pork with beef. Use sour cream with 20% fat. The tomato paste can be replaced with ketchup or fresh tomatoes.
Step 2
First cut the crust off the bread roll (for patties it’s better to use slightly stale bread - it absorbs meat juices better and makes the patties juicier). Crumble the soft part into a small bowl and pour in a little water or milk. Leave for 10 minutes so the bread softens.
Step 3
Peel the onion and grate it on a fine grater - this will also make the patties juicier and the sauce more aromatic.
Step 4
Squeeze the soaked bread and add it to the ground meat. Add a spoonful of sour cream and crack in the egg. Salt and pepper the mixture. Knead the meat very well so the mixture becomes uniform and dense.

Shape round patties from the meat mixture.

How to make the sauce for patties with tomato paste? In a small bowl mix water, sour cream, tomato paste and a spoonful of flour. Be sure to add a little sugar - it neutralizes the acidity of the tomato paste. Salt and pepper the sauce.
Step 7
Place a skillet over medium heat, pour in the frying oil. Coat the shaped patties in flour. Lay them into the hot oil.
Step 8
Fry the patties on both sides until golden brown.
Step 9
Pour the prepared sauce over the patties. Reduce the heat to low. Simmer the patties in the sauce for 20-25 minutes. The exact time will depend on the size of your patties.

During simmering the sauce may boil down a little; keep an eye on it and add some hot water if necessary.
