Mashed Potatoes with Mushrooms

Simple and delicious, quick and easy to make, budget-friendly! Tender mashed potatoes with mushrooms are perfect for a family lunch or dinner. Kids will eat it with pleasure. You can serve it with sauces, gravies, or a fresh vegetable salad.

Preparation
Step 1
Peel the potatoes and rinse them under running water.

Place the peeled potatoes into a pot. If the potatoes are large, cut them into 2-3 pieces so they cook faster. Cover with water so they are fully submerged. Bring to a boil, then cook on low heat for 20-30 minutes until the potatoes are soft.
Step 3
While the potatoes cook, prepare the mushrooms. Use any type you like; I used fresh champignons. Wash them thoroughly under running water, then slice into large pieces. Heat a skillet with a little vegetable oil, add the mushrooms, and sauté for 10-12 minutes, stirring occasionally.
Step 4
During cooking, the mushrooms will shrink and release some liquid, which will partially evaporate. Add pressed garlic (more or less to taste). Season with salt and ground black pepper. Cook for another 2 minutes, then remove from heat so the mushrooms don’t dry out.
Step 5
Once the potatoes are soft, drain the hot water and add butter. Mash the potatoes with a masher, gradually adding warm milk (or cream if preferred). For smoother consistency, you can use a blender.
Step 6
The mashed potatoes should be neither too thick nor too runny. Adjust consistency to your taste by adding more milk.
Step 7
Place the mashed potatoes on a plate and top with sautéed mushrooms. Serve hot. Enjoy!
