Preparation
Step 1
Prepare the ingredients. You can use any fruit or berries as well as your favorite jam, preserves or fruit spread. Mascarpone can be replaced with plain soft cream cheese. Adjust the amount of powdered sugar according to the sweetness of the jam.
Step 2
Cut the ladyfingers in half or into smaller pieces depending on the size of your serving glasses. You can also use other cookies, such as sponge fingers or plain sweet biscuits.
Step 3
Rinse and dry the berries. Cut the strawberries into slices.
Step 4
Prepare the berry jam. Blueberry jam with whole berries works especially well, but any homemade or store-bought jam can be used.
Step 5
Combine the mascarpone, powdered sugar and vanilla in a bowl. Beat with an electric mixer until smooth. If the cream is too thick, loosen it with a little heavy cream or sweetened condensed milk.
Step 6
Place half of the cookies in the bottom of dessert glasses. Spoon over some of the jam, followed by a layer of mascarpone cream. Add fresh strawberries and blueberries, then repeat the layers. The recipe makes about 3 servings. Serve immediately for crisp cookies, or refrigerate for 1–2 hours for a softer texture.
Step 7
Garnish the mascarpone dessert with fresh mint and serve.
