Marmalade yoghurt cake
A light, citrus-scented loaf cake made with yoghurt and finished with a glossy orange marmalade glaze - perfect for teatime or dessert.

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Preheat the oven to 180C. Grease and line a baking pan.
Step 2
In a large mixing bowl, whisk together the yoghurt, vegetable oil, lemon zest, orange zest and eggs until the mixture is pale, light and fluffy. Sift in all of the dry ingredients and gently mix until just combined, taking care not to overwork the batter.
Step 3
Spoon the mixture into the prepared loaf tin and level the surface. Bake for about 45 minutes, or until a skewer inserted into the centre of the cake comes out clean.
Step 4
Remove the cake from the oven and allow it to cool slightly in the tin.
Step 5
Meanwhile, prepare the glaze by gently warming the marmalade and orange juice together until the marmalade has melted and the glaze is smooth. Pour the warm glaze evenly over the cake and leave it to cool completely.
Step 6
Once fully cooled, remove the cake from the tin and serve.
