Step 1
How do you make a simple mandarin cake in the oven? Prepare the needed ingredients. Sift the flour through a sieve to aerate it.

In a mixing bowl, combine the eggs and sugar. Turn the mixer on low, then increase to high speed. Whip until you get a fluffy, pale foam.

While the eggs are whipping, peel the mandarins. Check the segments for any seeds.
Step 4
Sift the flour with baking soda into the whipped eggs and gently fold it in with a whisk. Keep in mind you may need a little more or less flour - watch the batter consistency.

While stirring, pour in the melted butter. You can replace it with vegetable oil. Fat in the batter makes the baked cake more tender and helps it stay soft longer.

Pour the batter into a baking pan greased with butter. Mine is 20 cm (about 8 inches).

Arrange the peeled mandarin segments on top. Bake in a preheated oven at 180°C (356°F) for 40-50 minutes. Adjust to your oven.

A batter based on well-whipped eggs rises very well during baking. The finished mandarin pour-over cake will turn golden. Remove it from the oven, let it cool a little, and enjoy. Bon appétit!
