Lorraine Pie with Mushrooms and Chicken in the Oven

Preparation
Step 1
First, prepare the necessary ingredients and spices for making the aromatic chicken and mushroom pie.
Step 2
For the shortcrust pastry, take a large bowl and a fine sieve, sift in 200 g (1 2/3 cups) of all-purpose flour, add ½ tsp salt, ½ tsp baking powder, 1 tsp sugar, a pinch of coriander, and mix the dry ingredients.
Step 3
Add 100 g (7 tbsp) softened butter to the bowl and rub into the flour until crumbs form.
Step 4
Crack 1 egg into the bowl and mix until a smooth dough forms.
Step 5
Knead the dough in the bowl by hand for 2 minutes, place it in a plastic bag, and refrigerate for 30 minutes.
Step 6
Heat a skillet with 3 tbsp vegetable oil, add 1 finely chopped onion, and sauté over high heat.
Step 7
Cut 200 g (7 oz) chicken breast into small pieces, add to the skillet with onions, stir, and fry for 6-7 minutes over high heat.
Step 8
Season with salt, ground coriander, and mixed peppers.
Step 9
Cut 200 g (7 oz) mushrooms (champignons) into small pieces and add to the skillet with chicken and onions.
Step 10
Stir and fry the mushrooms for 7-8 minutes over high heat.

For the filling, combine 200 g (¾ cup) sour cream, salt, ground black pepper, dill, 10 g (1 tbsp) cornstarch, and 1 egg in a bowl. Mix until smooth.
Step 12
Take a 24-26 cm (9-10 inch) baking dish, spread the dough evenly, form the edges, and prick with a fork.
Step 13
Cover the dough with parchment paper, pour in 1 cup dried peas (for weight), and bake at 435 °F (225 °C) for 10-12 minutes.

Mix the mushroom and chicken filling with the sour cream mixture until uniform.
Step 15
Remove the shortcrust base from the oven after 12 minutes and spread the filling evenly inside.
Step 16
Bake the pie at 375 °F (190 °C) for 15-20 minutes until fully cooked. Remove from the oven and release from the pan.
