Loaf cake with raisins

This spiced fruit loaf is soft, aromatic, and packed with sultanas, cherries, and citrus zest - perfectly baked at 220C for a golden crust.

Preparation
Step 1
Combine the flour, salt, sugar, butter, yeast, milk, and water in a bowl, mixing by hand until the dough comes together. Once fully combined, turn the dough onto a floured surface and knead until smooth and elastic.
Step 2
Place the dough back in the bowl, cover, and let it rest for one hour. After resting, incorporate the sultanas, cherries, cinnamon, and orange zest, kneading the ingredients evenly through the dough by hand or using a mixer.
Step 3
Shape the dough into a sausage by rolling it up from a flattened rectangle. Transfer to a greased baking tray, then place the tray inside a plastic bag (without touching the top of the dough) and let it rise for another hour.
Step 4
Preheat the oven to 220C. Bake the loaf for 25-30 minutes until golden and cooked through. Cool on a wire rack.
Step 5
Slice and enjoy with a generous spread of butter.
