Loaf cake with cherries and chocolate

A sweet, festive bread studded with cherries and chocolate chips, perfect for breakfast or afternoon tea.

Preparation
Step 1
Place the flour into a large bowl, adding the salt and olive oil to one side and the yeast to the other. Gradually pour in the water and mix by hand until the dough is pliable.
Step 2
Turn the dough onto a lightly floured surface and knead for 4-7 minutes. Fold in the cherries, adding extra flour if needed, then mix in the chocolate chips until evenly distributed.
Step 3
Return the dough to the bowl, cover with a clean tea towel, and leave to prove until doubled in size, about 1-1½ hours.
Step 4
On a floured surface, divide the dough in half and shape each portion into a long strand. Cross one strand over the other to form a base for plaiting. Continue looping and crossing the strands, always working from the far ends, until the loaf is fully plaited. Tuck in any loose ends.
Step 5
Dust a baking tray with flour and place the loaf on it. Dust lightly with flour, cover with a large plastic bag, and leave to prove for 1 hour.
Step 6
Preheat the oven to 220C. Bake the bread for 20 minutes, then reduce the temperature to 200C and bake for another 20-25 minutes. Transfer to a wire rack to cool completely.
Step 7
Once cooled, slice the bread and serve warm with tea or coffee.
