Liver Cake with Carrots and Onions

Advice
As a dressing, you can use not only mayonnaise but also sour cream or natural yogurt. They can be used separately or mixed with mayonnaise in any ratio to taste - this will reduce the calorie content of the dish.
Preparation
Step 1
You can use any type of liver. I used chicken liver. Use full-fat sour cream (mine was 20%). Boil 3 eggs in advance to decorate the cake.
Step 2
Rinse the liver well, remove any membrane. Place the prepared liver in a blender or another suitable container.
Step 3
Add three raw eggs to the liver.
Step 4
Add sour cream.
Step 5
Add flour.
Step 6
Blend everything thoroughly with a blender.
Step 7
Peel the onion, rinse with cool water to avoid eye irritation, and dice it.
Step 8
Wash and peel the carrot, then grate it on a coarse grater.
Step 9
Peel and finely chop the garlic, then add it to the mayonnaise.
Step 10
Heat a skillet, add a portion of the liver batter to form a thin pancake. I made 10 layers using a 20 cm (8 inch) pan. Adjust according to your pan size.
Step 11
After 1-2 minutes, the pancake will firm up and become brownish-beige. Carefully flip it with a spatula and cook the other side for the same amount of time.
Step 12
In a hot pan, add 1 tablespoon of vegetable oil, then add the onions and carrots. Sauté them over medium heat for about 7-10 minutes, stirring occasionally.
Step 13
Transfer the cooked vegetables to a plate. Divide the mix into as many parts as you have layers, minus one (I had 10 pancakes, so I divided it into 9 portions).
Step 14
Spread one pancake with garlic mayo, top with a portion of the sautéed vegetables. Repeat for all pancakes, stacking them to form a cake.
Step 15
Peel the boiled eggs. Separate the whites from the yolks. Grate the egg whites and use them to decorate the sides of the cake.
Step 16
Do the same with the yolks and decorate the top of the cake.
Step 17
Decorate the top as desired. I made a rose from boiled carrot and added parsley sprigs. The liver cake is ready. Enjoy!
