Lentils with Meat

A hearty and very healthy dish for the whole family! Lentils with Meat are a great way to diversify your menu. Use pork, chicken, beef, or make a vegetarian version with grains and vegetables.

Preparation
Step 1
You can use either red or green lentils. Instead of tomatoes, you can use tomato paste or ketchup.
Step 2
First, rinse the meat and pat it dry. Cut the pork into small, even pieces. Pour a small amount of vegetable oil into a Dutch oven (or a heavy-bottomed pot), heat it, and add the meat to fry. Stir and cook until it turns golden. Then reduce the heat to medium, add 1/4 cup (about 60 ml) of water, and simmer the pork for about 45-50 minutes. You can also cook in a high-sided skillet or a thick-bottomed saucepan.
Step 3
After some time, open the lid and check if the meat is sticking to the bottom. Add a little more water if necessary. Meanwhile, prepare the remaining ingredients: peel the carrots, onions, and garlic. Cut bell peppers in half and remove the core and seeds. Rinse all vegetables under cold water.
Step 4
Cut the onion, carrot, and bell pepper into small pieces - cubes or sticks.
Step 5
Grate the tomatoes using a coarse grater.
Step 6
When the time is up, add the onion, carrot, and bell pepper to the meat. Increase the heat to high and fry everything together, stirring, for about 5 minutes.
Step 7
Rinse the red lentils in cold water.
Step 8
Add the lentils to the pot, then pour in the grated tomatoes. I also added a few cherry tomatoes to make the dish look more appetizing. Salt to taste and add your favorite spices.
Step 9
Add finely chopped garlic to the rest of the ingredients. Pour in enough water so that it slightly covers the lentils. After it comes to a boil, reduce the heat to low and cook the lentils under a lid until tender - about 15 minutes.
Step 10
At the end, stir everything well and sprinkle with finely chopped fresh herbs. Done - ready to serve!
