Lenten Oatmeal Cookies
Simple, light, wholesome, and very tasty. Even a beginner can make Lenten Oatmeal Cookies. They contain no eggs, dairy products, or animal fats, so they are suitable for those who are fasting. There is no need to give up sweets during times of dietary restrictions.

Step 1
How do you make Lenten Oatmeal Cookies? Prepare the ingredients. Quick oats work best, because they are softer and will bake better. But if you have traditional oats, use them, then the cookies will have more texture. You may need a little more or a little less flour, depending on the dough. Use liquid, natural, good-quality honey. The oil should be odorless. If you do not like any of the spices, simply leave them out.

Pour the water and oil into a saucepan. Add the honey. Heat the mixture over low heat until the honey dissolves. Add the ground spices, cinnamon and nutmeg. Add the baking soda. Continue heating.
Step 3
Stirring constantly, heat the mixture until foam appears, but do not let it come to a boil. Remove it from the heat.
Step 4
Pour the honey mixture over the oats and mix well. The heat will soften them a little. If you are using traditional oats rather than quick oats, leave them to sit for about 10 minutes.
Step 5
Add most of the flour. Add the salt. Mix with a spoon. Gradually adding the remaining flour, knead the dough.
Step 6
The dough should become fairly thick, so that you can knead it with your hands. But do not overdo the flour, the dough should still remain soft.

Line a baking sheet with parchment paper or a special baking mat. Shape the dough into balls with your hands. Place them on the paper and flatten them slightly on top.

This amount of ingredients made 11 cookies for me.
Step 9
Bake the cookies in a preheated oven at 180°C (350°F) for 25 minutes. Remove the finished cookies from the oven and let them cool, covering the baking sheet with a towel. Serve them with tea or fruit compote. Enjoy your meal!
