Lemon Filling

Preparation
Step 1
Choose ripe, undamaged lemons with a strong aroma. Rinse them thoroughly under running water using a stiff brush. Scald with boiling water and let sit in the hot water for about 1 minute. This removes bitterness from the zest and enhances the aroma. Pat dry with paper towels.
Step 2
Cut the lemons into any size pieces - shape doesn’t matter since they’ll be blended later. Remove every single seed carefully, as even one can make the filling bitter.
Step 3
Transfer the lemon pieces to a blender (or meat grinder if you don’t have one). Add sugar and blend until smooth. Add cornstarch and mix well so it dissolves evenly. You may use potato starch instead. Starch prevents the filling from becoming runny or burning. Let sit for 30 minutes so the sugar dissolves completely.
Step 4
Use the prepared lemon filling in your favorite baked goods.

If you skip the starch, you can simply enjoy the lemon-sugar mixture with tea. Bon appétit!
