Lean Water-Based Hand Pies with Sorrel and Greens

Preparation
Step 1
Prepare all the ingredients. Sift the flour into a bowl together with the baking powder and add a couple of pinches of salt.

Next, pour room-temperature water and vegetable oil into the flour. Mix and knead the dough until it comes together into a ball. The dough should not stick to your hands.

You will get an elastic dough. Wrap it in plastic wrap and place it in the refrigerator for 30 minutes to rest.

Wash the sorrel well under running water, let it drain, and dry it. It is convenient to use finely chopped sorrel for the filling.

Shape the dough into a log, divide it into small pieces, and roll them into balls. Roll each ball into a thin round. Now take 1 tablespoon of sorrel and add sugar to the filling to taste.

And add a little starch so that the juice from the filling does not leak out during baking. The starch creates a pleasant and delicate jelly-like filling.

Shape the pies in any form you like: triangles, round, or classic. Line a baking sheet with parchment paper and grease it beforehand with vegetable oil. Bake the pies in the oven for 25-30 minutes at 180°C (350°F). If you brush the tops of the pies with sweet water or egg yolk, they will get an appetizing crust.
