Lazy Dumplings with Potatoes
Quick, easy, and budget-friendly for the whole family! Lazy dumplings with potatoes are a hearty, homey dish. When you don’t want to shape regular dumplings, these come to the rescue. They’re faster to prepare and can be frozen for later.

Preparation
Step 1
You can cook mashed potatoes specially for the dumplings or use leftovers. The weight is given for peeled potatoes. The flour amount is approximate - adjust based on the dough texture.
Step 2
Wash and peel the potatoes, then cut them into pieces for quicker boiling. Place in a pot and cover with cold water.
Step 3
Bring to a boil over medium heat, then reduce the heat. Cook 20-25 minutes until tender (a knife should easily pierce the pieces). Don’t salt yet - we’ll do it later.
Step 4
Drain all the water completely and mash the potatoes until smooth.
Step 5
Add a small piece of butter and mix well.
Step 6
Add eggs, salt, and pepper to taste. Stir until smooth (a spoon or mixer works).
Step 7
Gradually add flour in small portions, kneading after each addition. The dough should remain soft, slightly sticky, but hold its shape. Too much flour makes dumplings tough.
Step 8
When the dough becomes thick yet pliable, take a portion and roll it on a floured surface into a rope. Cut it into small pieces. You can press each piece lightly with a fork for decoration.
Step 9
Bring a pot of water to a boil, add salt. Drop in the dumplings, stir gently so they don’t stick. Once they float to the top, cook for 3-4 minutes. Remove with a slotted spoon. Cook in batches to prevent sticking.
Step 10
While dumplings cook (or a bit earlier), prepare the onions. Peel and chop them - cubes or half rings both work.
Step 11
Heat a pan over low heat, add a small piece of butter and a bit of vegetable oil (so the butter doesn’t burn). Add the onions.
Step 12
Fry the onions, stirring occasionally, until golden brown and fragrant.
Step 13
Serve the dumplings topped with the fried onions - or simply with butter or sour cream. Delicious and comforting!
