Preparation
Step 1
Prepare the ingredients. Boil the eggs for 7–8 minutes, then drain the hot water, cover them with cold water and leave to cool.
Step 2
Peel and finely chop the onion. Briefly rinse the champignons, pat them dry and slice. Heat a little vegetable oil in a frying pan and cook the mushrooms with the onion for 5–6 minutes. Season lightly with salt and ground black pepper. Let the fried mushrooms cool completely.
Step 3
Remove the smoked chicken meat from the bones and finely chop it. Cut the cucumber into small cubes. If the skin is tender and not bitter, there is no need to peel it. Peel the cooled boiled eggs.
Step 4
Assemble the salad in layers. Place a serving ring on a plate and add the smoked chicken as the first layer, pressing it down lightly. Spread a little mayonnaise over this and each following layer.
Step 5
Arrange the diced cucumber over the chicken layer.
Step 6
Add the cooled fried mushrooms and onions as the third layer.
Step 7
Coarsely grate the eggs and spread them over the mushrooms, pressing lightly. Garnish with fresh herbs if desired. Remove the serving ring and chill the salad briefly in the refrigerator before serving.
