Layered Meat Pastries with Lamb and Beef Filling

Preparation
Step 1
Prepare all the necessary ingredients and spices for making juicy, golden meat pastries.
Step 2
Start making the hot-water dough and pour 300 ml (about 1 1/4 cups) of boiling water into a deep bowl.
Step 3
Add 2 tablespoons of vegetable oil to the bowl with the boiling water.
Step 4
Add 1 teaspoon of salt to the bowl and stir.
Step 5
Gradually add 500 g (about 17.6 oz) of pre-sifted flour to the bowl.
Step 6
Mix well to form the dough, then gather it into a ball with your hands.
Step 7
Place the dough on a table lightly dusted with flour, knead it very well for about 5 minutes, then put it into a bag.
Step 8
Finely chop 500 g (about 17.6 oz) of onion, place it into a large bowl, and add salt to taste.
Step 9
Add cumin, coriander, and a mixture of black and red pepper to the bowl, to taste.

Mash the onion well in the bowl until it releases its juice.

Add 500 g (about 17.6 oz) of prepared ground meat to the bowl with the onion and mix all the ingredients together well.

Divide the dough into 2 parts, then sprinkle a little starch on the table, dust the rolling pin with it as well, and roll each piece of dough into a thin round.

Brush each round with a thin layer of warmed clarified butter, making sure it is warm but not hot.

Roll each buttered round into a tight log.

Tuck in the ends of the roll and twist it into a rope, then cut it into equal-sized pieces.

Press each cut piece down with your hand to flatten it, then place the pieces in a bag and put them in the freezer for 15–20 minutes.

After that, roll each piece out into a thin round.

Place the needed amount of meat filling onto each round.

Seal the edges of the dough well, shape each pastry into a triangle, and place it seam side down on a baking sheet.

Place the baking sheet with the pastries into an oven preheated to 200°C (400°F) for 15 minutes.

Remove the baking sheet from the oven and brush the pastries with egg yolk beaten with milk.

Sprinkle the pastries with sesame seeds to taste and return them to the oven for another 15 minutes.
Step 23
After 15 minutes, remove the baking sheet with the finished pastries from the oven and transfer them to a plate. Enjoy your meal!
