Layered Chicken Salad with Poppy Seeds

Preparation
Step 1
You can use store-bought mayonnaise or make your own.
Step 2
Remove the skin and bones from smoked chicken breast, cut into small cubes. You can replace it with meat from smoked chicken thighs.
Step 3
Wash and dry the tomatoes. Remove seeds to prevent the salad from becoming watery. Cut the flesh into small cubes. Use firm tomatoes. Soft ones will lose shape and spoil the salad’s appearance.
Step 4
Boil eggs until hard, cool, and peel. Separate whites and yolks. Grate or finely chop the whites. Grate the yolks finely; you can also grate them directly over the salad.
Step 5
You can use store-bought croutons, adjusting flavor as desired, or make them yourself. Croutons can be from white or dark bread. Rye croutons are preferable as they absorb less moisture. Cut into small cubes or sticks and bake at 350°F (180°C) for 15-20 minutes. Cool before use.
Step 6
Place a culinary ring (Ø 16 cm) or use small portion rings on the serving plate. First layer: smoked chicken, top with a mayonnaise lattice. Using a piping bag works better than a spoon.
Step 7
Spread tomatoes over the chicken, season with salt and pepper. No mayonnaise needed on this layer.
Step 8
Next, add the grated egg whites, drizzle with mayonnaise. Sprinkle with grated yolks and top with more mayonnaise.
Step 9
Add croutons on top.
Step 10
Lightly coat croutons with mayonnaise so the poppy seeds stick better.
Step 11
Generously sprinkle poppy seeds over the salad. Because of the croutons, prepare this salad right before serving; no soaking needed.
Step 12
Remove the culinary ring before serving. Garnish with lettuce leaves, parsley, and cherry tomatoes. Enjoy!
